Quick Tips on Resizing
Need to change your number of servings? At baf.com, our resizing feature takes
care of that for you, automatically recalculating the recipe to your desired
yield. Just type in the number of servings you need, and we'll do the work
adjusting the ingredient quantities from the original recipe.
While the automatic resizing feature does change ingredient quantities in the
quantity column, amounts are NOT changed in the directions. So please remember,
you'll still want to rely on your experience when looking at resized directions.
Resizing Adjustments
Any time you alter the quantity of ingredients for a given recipe, you may have
to adjust your seasoning methods, cook time, cook temperature, and pan size.
Seasoning
Slowly season to taste, testing the flavor intensity each time you add or take
away from the original recipe. Even if you're doubling a recipe, you'll use only
about 1 1/2 times the seasoning of the original recipe. Use less than a half or a
third of the original amount of seasonings if you're dividing the recipe by half
or one-third.
Cook time
Use the original cook time as a reference and monitor your results closely.
Cook temperature
Monitor your food closely, using the cooking temperature of the original recipe as
a checkpoint. You can also judge your adjusted temperature by the internal temperature
your food needs to reach.
Pan size
Try to find a pan that keeps the ingredients at the same depth as the pan in the original
recipe—keeping your proportions as similar as possible. For example, if you are
doubling a recipe, cook with a pan that has double the volume of the one in your original
recipe, or cook in two separate pans.
Volume Conversion
If you're expanding your recipe by 4 times, and the original calls for 4 tablespoons of
vanilla, you don't have to measure out 16 tablespoons of this ingredient. Volume conversion
saves you time in the kitchen and helps you maintain accurate portion control more easily.

Exceptions
Resizing does not work accurately for foods like breads and pastries, as well as items
that are originally prepared as one large item then later divided into smaller portions.
In cases such as these, simply prepare the recipe in separate batches according to the
original instructions.
Rules of Thumb
- For best results, increase or decrease a recipe by no more than 4 times the original
yield. Limiting it to 2 times is recommended.
- Each of these recipes was developed and tested for the original serving size listed.
Please rely on your own experience in the kitchen when resizing.
