Zucchini Garlic Mashed


1  pouch Brilliant BeginningsĀ® Mashed Potatoes
1/4  cup Olive oil
8  cups Zucchini, shredded
1/4  cup Roasted garlic, pureed
2 1/2  tsp Kosher salt
2  cups Milk
2  cups Parmesan cheese, shredded


  1. Prepare mashed potatoes according to base prep directions. Hold hot.
  2. Heat olive oil medium heat, add zucchini and cook, stirring frequently, until zucchini has given up most of its moisture and begins to turn light brown, about 8 min.
  3. Add roasted garlic, salt, and milk to zucchini, bring to a simmer, about 3 min.
  4. Stir zucchini mixture and cheese into potatoes. Serve or hold hot.
