An assortment of sauteed zucchini, squash, and green peppers stirred into zesty seasoned chili for a meatless twist on an old favorite.

Vegetarian Chili

Ingredients

1  pch Santiago® Quick-Start® Vegetarian Chili with Red Beans, prepared
1/2  cup Zucchini, chopped
1/2  cup Green bell pepper, chopped
1/2  cup Fennel, chopped
1/2  cup Yellow crooknecked squash, chopped
2  Tbsp Vegetable oil

Instructions

  1. Prepare Santiago® Quick-Start® Vegetarian Chili with Red Beans according to package directions, omitting ground beef.
  2. Saute vegetables in oil until tender; stir into prepared chili.
