Vegetable Pesto Mashed Potato Bowl

Rich, creamy mashed potatoes topped with zucchini and peppers along with a drizzle of pesto sauce.

Vegetable Pesto Mashed Potato Bowl

Ingredients

1  cup Potato Pearls® or Potato Pearl® EXCEL® Mashed Potatoes, prepared
1  Tbsp Pesto sauce, prepared
1/2  cup Zucchini, diced
1/2  cup Bell peppers, red/yellow
1  sprig Basil

Instructions

  1. Prepare Potato Pearls® according to package directions.
  2. Steam or saute zucchini and bell peppers until tender.
  3. Place 1 cup potatoes in 16 oz. container and drizzle 1 Tbsp pesto over potatoes. Place ½ cup zucchini and ½ cup bell peppers over potatoes.
  4. Garnish with basil sprig.
