Sweet Potato Pie


1  pch Potato Pearls® EXCEL® Sweet Potato Mashed, prepared
3  tsp Cinnamon, ground
3/4  tsp Cloves, ground
1 1/2  cup Sugar, light brown
3/4  cup Half and half
3  Tbsp Lemon juice
6  each Eggs, whole
2 1/2  tsp Ginger, ground
1/2  tsp Nutmeg, ground
3/4  cup Sweetened condensed milk
1 1/2  Tbsp Vanilla extract
4  each Pie shells, pre-baked


  1. Heat oven to 300°F.
  2. Prepare Potato Pearls® EXCEL® Sweet Potato Mashed, according to package instructions and let cool.
  3. Whisk eggs, cinnamon, ginger, cloves and nutmeg in a large bowl until well combined, set aside.
  4. Whisk prepared sweet potatoes, sugar, sweetened condensed milk, half and half, vanilla and lemon juice in a large bowl. Combine sweet potato and egg mixtures, whisk until smooth.
  5. Divide batter evenly into 4 prebaked pie shells; about 3 cups per pie crust. Bake until pie has just set in the center, about 60 min. Remove to cooling rack. Cool at least 1 hour prior to serving.
