Southwest Veggie Mashed Potato Bowl

A mashed potato bowl with the flavors of the Southwest. Serve as a side or vegetarian entrée.

Southwest Veggie Mashed Potato Bowl

Ingredients

1  cup Potato Pearls® EXCEL® Mashed Potatoes, prepared
2  Tbsp Enchilada sauce
2  oz Onions, roasted
1/2  tsp Southwest seasoning
1  oz Corn, frozen
1/4  cup Santiago® Seasoned Vegetarian Black Beans, prepared
1/4  cup Cheese sauce
1/4  cup Cheddar cheese, shredded
1/4  tsp Cilantro, chopped

Instructions

  1. Prepare mashed potatoes according to package directions.
  2. Prepare onion according to recipe.
  3. Combine onions, enchilada sauce and seasoning.
  4. Combine thawed corn and well-drained black beans.
  5. Prepare cheese sauce according to recipe.
  6. Place 1 cup potatoes in 16 oz container.
  7. Evenly place onion mixture over potatoes.
  8. Ladle ¼ cup cheese sauce over onions, and place corn and black bean mixture over sauce.
  9. Sprinkle ¼ cup shredded cheddar cheese over sauce.
  10. Sprinkle ¼ tsp cilantro over cheese.
