Ingredients

4  cup Potato Pearls® Smart Servings™ Mashed Potatoes, prepared, chilled
1   Onion, small, peeled, quartered
5  cloves Garlic, peeled
1/2  cup Lemon juice
1  cup Olive oil. extra virgin
2/3  cup Olives, kalamata, pitted, quartered
2  Tbsp Pinenuts, toasted
2  Tbsp Parsley, chopped

Instructions

  1. Prepare Potato Pearls® Smart Servings™ Mashed Potatoes according to package directions and let chill until cold.
  2. Blanch onion and 4 cloves of the garlic for 10 sec. in 2 quarts of water at a rolling boil in a medium saucepan over high heat. Remove onion and garlic and shock in ice water. Drain.
  3. Place onion, garlic, remaining clove of raw garlic and lemon juice in a food processor and pulse until finely minced.
  4. Add cold prepared Potato Pearls® Smart Servings™ and blend until thoroughly incorporated.
  5. Drizzle oil into potatoes to emulsify the mixture, about 30 sec., scraping down the sides of the bowl as needed. Transfer to serving dish.
  6. Mix together olives, pine nuts and parsley in a large bowl.
  7. Garnish dip with olive mixture and additional olive oil if desired.
