Sesame Chicken Mashed Bowl

Ingredients

1  pch Potato Pearls® Smart Servings™ Low Sodium Mashed Potatoes
2  Tbsp Orange zest, grated
4  Tbsp Ginger, fresh (or 2 Tbsp ground ginger)
1  gal Hot Water (170°-190°F)
4 3/4  lb Chicken thighs, boneless, skinless, cooked
2 1/2  lb Green beans, fresh/frozen, cooked
2  oz Sesame seeds, toasted
19  each Parsley sprigs (optional garnish)

Instructions

  1. Add Potato Pearls® Smart Servings™ Low Sodium Mashed Potatoes, orange zest and ginger to a 4-inch deep, half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.
  2. Cut cooked chicken thighs in half and sprinkle with sesame seeds.
  3. Bowl Assembly: In an individual serving bowl place 1 cup orange and ginger mashed potatoes, top with green beans, then sesame chicken. Garnish with parsley.
