Roasted Garlic & Buttermilk Mashed Potatoes with Potato Pearls® Extra Rich

Roasted Garlic & Buttermilk Mashed Potatoes with Potato Pearls® Extra Rich

Ingredients

1  carton Potato Pearls® Extra Rich Mashed Potatoes
1/2  gal Milk, 2%
1 1/2  Tbsp Salt
1/4  cup Chives, dry
1  qt Buttermilk
1 1/2  gal Boiling water (190°-212°F)
1/2  lb Butter, diced
1  tsp Black pepper
1  cup Roasted garlic

Instructions

  1. Heat water, milk, butter, salt, black pepper, chives and roasted garlic to a boil over medium-high heat, stirring occasionally. Transfer to the bowl of an electric mixer fitted with ship attachment.
  2. Add Potato Pearls® Extra Rich Mashed Potatoes in a steady stream while whipping at medium speed until potatoes begin to thicken, about 1 min., scraping down sides of the bowl once during mixing.
  3. Add buttermilk and whip until fully incorporated, about 1 min. Increase speed to high and whip until light, about 3 min., scraping down the sides of the bowl once during mixing. Transfer to steam table and serve.
