Ingredients

  STEP 1 - BEANS
2  cup Santiago® Seasoned Vegetarian Black Beans, prepared
3  Tbsp Fire roasted poblano flavor concentrate (like Minor's®)
2  tsp Cumin, ground
1/4  tsp Hot pepper sauce (Like Tabasco®)
  STEP 2 - SALSA
1/4  cup Poblano pepper, chopped
2  cup Tomato, diced
1/2  cup Onion, diced
1/2  cup Red pepper, diced
  STEP 2 Cont'd.
3  Tbsp Cilantro, chopped
2  tsp Garlic, minced
1  Tbsp Lime juice
  STEP 3 - TOPPING
1 1/2  cup Mozzarella cheese, shredded
1/4  cup Queso fresco, crumbled or shredded
1  cup Chorizo, cooked, crumbled, drained
8  oz Tortilla chips

Instructions

  1. STEP 1 Prepare Santiago® Seasoned Vegetarian Black Beans according to package directions. Combine Santiago® Black Beans with the remaining beans ingredients. Set aside.
  2. STEP 2 Stir all ingredients together for the salsa. Season with salt and pepper.
  3. STEP 3 To serve- spread Santiago® Black Beans mixture onto an oven proof 12-inch platter. Top with the mozzarella cheese, the queso fresco and the chorizo. Bake at 350°F until hot and bubbly, about 15-20 min. Remove from oven and top with prepared salsa. Serve hot with tortilla chips on the side.
