Potato Corn Chowder

Creamy potato and corn chowder mixed with chopped onions and red and green peppers.

1  pch Potato Pearls® Premium Nature's Own Mashed Potatoes
1/2  lb Butter
5  cup Onions, chopped (about 3 large onions)
5  qt Water, hot (170°-190°F)
1/2  cup Vegetable or chicken base
1  gal Whole milk
1  tsp Cayenne pepper
1  tsp White pepper
1  tsp Nutmeg
1  can Cream-style corn (#10 can)
3  each Green and red bell peppers, finely diced


  1. Melt butter in a large soup pot over medium heat, add onions and cook, stirring frequently, until soft, about 10 min.
  2. Stir in hot water and chicken base and whisk until base is fully dissolved. Whisk in Potato Pearls® Premium Nature's Own Mashed Potatoes and cook, until smooth, about 5 min.
  3. Stir in milk, nutmeg, cayenne pepper, and cream-style corn. Heat soup without boiling, stirring occasionally until heated through, about 15 min. Transfer to steamtable and serve. Garnish with mixed diced peppers.
