1  crtn Golden Grill® Premium Russet Hashbrowns, prepared
4  cloves Garlic, minced
1/4  cup Basil, minced
1  cup Olive oil
10  each Plum tomatoes, sliced in 1/3 length-wise
2  bunch Basil, whole leaf
1/4  cup Pine nuts, toasted
1/2  cup Parmesan cheese, grated


  1. Refresh Golden Grill® Premium Russet Hashbrowns according to package directions.
  2. Combine the minced garlic, minced basil and half of the olive oil.
  3. Lay the sliced tomatoes on a baking rack, cover with the oil, basil and garlic mixture. Bake at 350° F for 30 min.
  4. Combine all remaining ingredients in a blender and purée until smooth.
  5. Remove tomatoes, roughly chop and mix into pesto then fold mixture into the hashbrowns.
  6. Spray muffin tins with non-stick spray. Fill to top with hashbrown mixture. Bake at 350°F for 20 min. Serve.
