Mexicali Mashed Potato Bowl


1  pouch Potato Pearls® EXCEL® Original Butter Mashed Potatoes
1/2  cup Sweet cherry peppers, finely chopped, stemmed and seeded
1  Tbsp Garlic, crushed
2  cups Sour cream
1  gal Hot water (170°-190°F)
3  lbs Carnitas, cooked, shredded
4  cups Tomato salsa


  1. Pour mashed potatoes, sweet cherry peppers and garlic to a 6-inch deep half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.
  2. Bowl Assembly: In an individual serving bowl place 1 cup mashed and top with 4-oz carnitas and 2-oz each tomato salsa and sour cream.
