Mediterranean Potato Dip

Thick and rich mashed potatoes mixed with yogurt, extra-virgin olive oil and garlic. Garnish with mint leaves and serve with toasted pita wedges and assorted vegetables.

Mediterranean Potato Dip


1  pouch Potato Pearls® Nature's Own Mashed Potatoes, prepared
6  cups Yogurt, plain, low-fat
1 1/2  cups Olive oil
1 1/2  Tbsp Garlic, minced
2  tsp Lemon juice, fresh
1/2  tsp White pepper
1/2  cup Mint leaves, chopped, garnish


  1. Prepare mashed potatoes according to package directions in a 6-inch deep half-steamtable pan.
  2. Mix in yogurt, olive oil, garlic, lemon juice, and white pepper. Transfer to steamtable to hold warm for service. Garnish dip with mint leaves for serving, if desired.
  3. Alternate serving suggestion: Mix chopped mint leaves into chilled dip and serve cold.
