Meatloaf Cupcakes with Mashed Potato Piping

Ingredients

2  cup Potato Pearls® EXCEL® Original Recipe Mashed Potatoes*, prepared
1 1/2  lb 85% Fat-free ground beef
3/4  cup Oats, uncooked
3/4  cup Tomato juice
2  each Eggs, large
1/2  cup Yellow onion, minced
3/4  tsp Salt
1/2  tsp Black pepper
1/2  cup Ketchup

Instructions

  1. Combine beef, next 6 ingredients; mix well. Divide mixture between 12 muffin cups lined (liners optional) (drop weight 4.5 oz); press down, smooth top and spread ketchup evenly on top.
  2. Bake at 350°F, for 30 min.
  3. Prepare Potato Pearls® EXCEL® Original Recipe Mashed Potatoes according to package directions. Let stand 5 min. Pipe hot potatoes over baked meatloaf cupcakes.
  4. *Can substitute with any Basic American Foods Mashed.
  5. Speed tip! Use prepared meatballs for quicker prep.
  6. Mini Cupcakes: Portion 1 oz. of the meat mixture(about 1½ Tbsp) in the mini-cup well (liners optional). Bake for 15-17 min.
