1  pouch Brilliant BeginningsĀ® Potatoes
40  each Whole chic lobster (can substitute with crab or cooked shrimp), cooked, shelled, small diced
20  bunches Green onions, minced
80  each Tomato, small, diced, no seeds
5  lbs Butter, melted
20  each Lemon
10  each Eggs, cracked and whisked
800  each Wonton skins, 2x2 inch square
  Salt and pepper (to taste)


  1. Prepare Brilliant BeginningsĀ® Potatoes according to recipe-ready directions.
  2. Mix remaining ingredients into the potatoes. Fold in and season with salt and pepper.
  3. Lay 2 rows of 10 wontons each, egg wash the bottom row. Add 1 tablespoon of filling in the center of the wonton, place the second wonton skin squarely over the top and gently press down sealing the ravioli.
  4. Boil water in a pot over the stove and add ravioli. Boil ravioli for about 3-4 min., until they float.
  5. Strain and plate. Top with accompanying sauce.
