Ingredients

1  pch Potato Pearls® EXCEL® Original Butter Recipe Mashed Potatoes
3/4  gal Water, hot (170°-190°F)
2 1/2  cup Sweet peas, frozen
3 1/4  cup Corn, whole kernel
1 1/4  cup Red bell pepper, small diced
1/3  cup Pickled jalapeno, minced
14  each Scallions, minced
2  Tbsp Kosher salt
5  oz Eggs, liquid
2 1/2  qt Panko breadcrumbs

Instructions

  1. Pour water into a 6-inch deep, half-steamtable pan
  2. Add Potato Pearls® EXCEL® Original Butter Recipe Mashed Potatoes and stir; stirring rapidly with slotted spoon, quickly pour entire pouch into water. Stir 15-20 sec. Set aside and allow to cool.
  3. Add remaining ingredients except panko to mashed, stir well.
  4. Roll out to preferred tot size, about 1-oz each. Fully cover with Panko and refrigerate at least one hour or overnight.
  5. Fry in a 350° F fryer until golden brown, approximately 30 sec. - 1 min. Serve.
