Loaded Mashed with Extra Rich


1  carton Potato PearlsĀ® Extra Rich Mashed Potatoes
1 1/2  gal Water
2  cups Milk, 2%
1/2  lb Butter, diced
2 1/2  Tbsp Seasoning salt
1/2  cup Chives, dry (or freshly sliced)
1  tsp Black pepper, ground
2  qts Sour cream
2  cups Bacon, cooked, chopped
4  cups Sharp Cheddar cheese, grated


  1. Heat water, milk, butter, seasoning salt, chives and black pepper to a boil, over medium high heat, stirring occasionally.
  2. Add sour cream to the bowl of a mixer fitted with the whip attachment. Pour water mixture over sour cream, turn mixer on to medium speed.
  3. Add mashed potatoes in a steady stream while whipping, until potatoes are fully hydrated, about 3 min., scraping down the sides of the bowl once during mixing.
  4. Add bacon and cheese and whip until cheese is melted, about 1 min. Transfer to steamtable and serve.
