1  pouch Brilliant Beginnings® Potatoes
8  lbs Turkey, ground
6  cups Red bell pepper, small, diced
3  cups Red onion, small, diced
1/2  cup Worcestershire sauce
20  oz Goat cheese, room temperature
2  bunches Dill, fresh, minced
1/2  cup Shallots, minced
  Lemon juice from 2 large lemons
  Salt and pepper (to taste)


  1. Prepare Brilliant Beginnings® Potatoes according to recipe-ready directions.
  2. Mix the potatoes with goat cheese, dill, shallots, lemon juice and season with salt and pepper. Set into the fridge to cool to 70°F.
  3. In a bowl, combine ground turkey with red pepper, onion and Worcestershire sauce.
  4. Form two 3 oz patties, place on a sheet pan.
  5. Form a 2 oz patty of goat/mash mixture and lay on top of one patty. Lay second patty over top and join the sides until you have a complete patty.
  6. Bake in a 375°F oven for 8 min., 6 min. if convection, or until turkey is fully cooked to internal temperature of 165°F.
