Fiesta Refried Beans

A festive blend of refried beans, green chilies, salsa, corn, onions, and cheddar cheese.

1  pch Santiago┬« Refried Beans with Whole Beans, prepared
2  Tbsp Oil
1  lb Onion, chopped, (about 3 cups)
2  cup Corn, frozen, thawed
7  oz Green chilies, diced
1  tsp Chili powder
1  cup Salsa, chunky or picante sauce
1  lb Cheddar cheese, shredded


  1. Prepare Santiago® Refried Beans with Whole Beans in a 4-inch deep, half-steamtable pan according to package instructions, hold hot.
  2. Heat oil in large skillet over medium heat. Add chopped onions. Cook until tender, stirring frequently, about 10 min. Add corn, chilies, chili powder, and salsa. Cook, stirring frequently, about 5 min.
  3. Stir onion mixture and cheese into beans until cheese has melted and mixture is thoroughly combined. Transfer to a steamtable for service.
