Ingredients

1  lb Potato Pearls® EXCEL® Original Butter Recipe Mashed Potatoes, prepared
14  oz Flour
1  each Egg, whole
1  tsp Vanilla extract
2  Tbsp Cinnamon sugar spice blend
  FILLING
6  oz Cream cheese
3  oz Passion fruit purée
3  Tbsp Confectioners sugar
1  tsp Ginger, ground

Instructions

  1. Prepare Potato Pearls® EXCEL® Original Butter Recipe Mashed Potatoes according to package directions.
  2. Mix mashed with remaining ingredients until well combined, and dough holds its shape. Set aside.
  3. Filling- Blend filling ingredients together until well combined.
  4. With lightly floured hands, gather 2 Tbsp. of the potato dough in the open palm of your hand and flatten it. Spoon 1/2 tsp. of the filling into the center of the potato dough. Fold the edges over the filling so that the filling is completely encased by the potato dough. Roll the filled potato-dough ball into a sphere shape. Drop potato dumplings into boiling water, and simmer uncovered, for about 10 min. Drain and serve. Garnish with a dusting of the cinnamon sugar. Serve.
