Ingredients

1  carton BAF Au Gratin Potato Casserole
1/4  cup Chipotles in adobo, pureed
5  qts Boiling water (190?-212?F)
1 1/2  cups Scallions, thinly sliced
2  cups Cheddar cheese, shredded (1/2 lb)

Instructions

  1. Whisk together seasoning packets, water, chipotles and scallions in a bowl, until combined. Place potatoes in a 2.5-in deep, full-size, steamable pan, pour seasoning mixture over potatoes.
  2. Bake in a convection oven at 350° F, uncovered, until potatoes are golden brown, about 45 mins. Spinkle cheese on top and bake until cheese is melted, about 5 min. Serve or hold hot.
