Cheddar Scallion Mashed Potatoes (low sodium)


1  carton Potato PearlsĀ® Extra Rich Mashed Potatoes
2  gal Water
2  cups Milk, 2%
1/2  lb Butter, diced
1 1/2  Tbsp Salt
1  tsp Black pepper, ground
1  cup Scallions, sliced very thin
3  cups Sharp cheddar cheese, grated


  1. Heat water, milk, butter, salt, black pepper and scallions to a boil, over medium heat, stirring occasionally. Transfer to bowl of an electric mixer fitted with whip attachment.
  2. Slowly add potatoes in a steady stream while whipping at medium speed until potatoes thicken, about 1 min.
  3. Add cheese, one cup at a time, and whip until incorporated, about 1 min. Whip on high until light, about 3 min, scraping down sides of the bowl once during mixing. Transfer to steamtable and serve.
