Cheddar cheese and scallion whipped into mashed potatoes for a rich and creamy side.

1  pouch Brilliant BeginningsĀ® Mashed Potatoes
2  cups Milk
1  cup Butter
3  cups Cheddar cheese, shredded
1/2  cup Scallions, thinly sliced
1  tsp Kosher salt


  1. Prepare potato base according to directions. Hold hot.
  2. Heat milk, butter, scallions and salt over medium-high heat, stirring occasionally, until butter is melted. Stir butter mixture and cheese into potatoes. Serve or hold hot.
