Black Bean Tacos

Corn tortillas topped with Santiago® Seasoned Black Beans served over shredded cabbage with lime and pico de gallo.

Ingredients

2  pkg Santiago® Seasoned Black Beans, prepared
90  each Corn tortillas, 6 in
1  lb Monterey Jack cheese, shredded
4  c Pico de gallo
1  head Cabbage, shredded
12  each Limes, cut into wedges

Instructions

  1. Prepare Santiago® Seasoned Black Beans according to package directions. Set aside.
  2. Heat tortillas in batches until soft in microwave or atop a flat-top grill; place on serving platter.
  3. Scoop 2 oz Santiago® Seasoned Black Beans into two-layered corn tortillas. Serve garnished with shredded cheese, pico de gallo, cabbage, and lime wedge.
