This sweet and savory layered potato pancake works great for breakfast or lunch.

Black Bean Potato Pancakes


3  pch Golden Grill® Potato Pancake Mix, prepared
1  pch Santiago® Seasoned Vegetarian Black Beans, prepared
1  gal Salsa, prepared


  1. Prepare Golden Grill® Potato Pancake Mix according to package directions. Do not grill.
  2. Prepare Santiago® Seasoned Vegetarian Black Beans according to package directions.
  3. Heat well oiled flat top grill to 350°F.
  4. Drop 1/2 cup (#12 scoop) Golden Grill® mix on grill. Immediately top with 2 Tbsp (#20 scoop) Santiago® beans. Flatten mixture slightly.
  5. Cook until golden brown, about 3 min. Flip and cook until second side is golden brown, about 3 min. Transfer to sheet pan. Repeat.
  6. To serve, place cake on plate and top with 1 oz salsa.
