Bangers & Mashed Bowl

Redskin mashed potatoes topped with sausage, sweet onions and gravy for a rich and filling meal.

1  pouch Potato Pearls® EXCEL® Redskin Mashed Potatoes
19  each Pork sausage link*, 3-4 oz
  Salt & Pepper
3  oz Canola oil
10  each Onion, sliced thin
1  tsp Dry thyme leaves
2  each Bay leaf
4  oz All-purpose flour
3  qts Chicken Stock
19  each Parsley sprigs (optional garnish)


  1. Prepare Potato Pearls® EXCEL® Redskin Mashed Potatoes according to package directions.
  2. Season sausage with salt and pepper. In a large skillet, heat 1 oz canola oil over medium-high heat. Brown sausage on each side, approx two min per side. Place on a full size sheet pan. Bake at 350°F until fully cooked to an internal temperature of 165°F about 10 min. Remove from oven and let rest 5 min. Slice into quarters.
  3. In a large pot add sliced onions, thyme and bay leaf and cook over medium heat until soft, stirring occasionally until brown.
  4. Add flour to onion mixture, stir and then add chicken stock. Bring to a boil and reduce liquid by half. Season with salt and pepper if desired. Set aside for service.
  5. Bowl Assembly: In an individual serving bowl place 1 cup mashed potatoes and top with sliced sausage and onion gravy. Garnish with parsley.
  6. Bowl Serving: 1 cup mashed potatoes, 1 sausage (4 quarters), ¼ cup onion gravy
