- Add one package of Potato Pearls® EXCEL® Original Butter Recipe Mashed Potatoes and wasabi to a 6-inch deep, half-steamtable pan. Quickly add hot water, stir completely, making sure to hit all four corners. Set aside.
- In a large bowl combine soy sauce, honey, pepper and garlic. Toss salmon in mixture and marinate 10 min. Place salmon on a full size sheet pan. Bake at 350°F until fully cooked to an internal temperature of 145° F, about 15 min. Remove from oven and let rest 5 min.
- In a large pot with boiling water, add Bok Choy and cook until soft, about 3 min. Remove from water and drain well.
- Bowl Assembly: In an individual serving bowl place 1 cup Potato Pearls® Mashed Potatoes, top with Bok Choy on one side and salmon on the other side.
