Add an Italian flair to your Mashed Potato Bowls. This version uses zucchini and peppers along with a drizzle of pesto sauce.

| To Serve: Place 1 cup potatoes in 16 oz microwaveable container Drizzle 1 tablespoon pesto over potatoes Place 1.75 oz zucchini over potatoes Place 1.5 oz bell pepper over potatoes Garnish with basil sprig Place lid on container and label and date appropriately |
