A Mashed Potato Bowl with the flavors of the Southwest.
Serve as a side or vegetarian entrée.

| Harvest Potato Pearls® Mashed Potatoes | 1 cup | Prepare potatoes according to package directions. |
| Enchilada Sauce | 2 tbsp. | |
| Roasted or Grilled onions | 2 oz. | Grill or roast onions. |
| Southwest Seasoning | 1/2 tsp. | Combine onions, enchilada sauce and southwest seasoning. |
| Corn, Frozen Niblets® | 1 oz. | Combine thawed corn and well drained beans. |
| Black Beans, canned | 1/4 cup | Heat both mixtures and hold warm for service. |
| Cheese Sauce, prepared | 1/4 cup | |
| Cheddar Cheese, shredded | 1/4 cup | |
| To Serve: • Place 1 cup potatoes in a container • Evenly place 3-1/2 oz onion mixture over potatoes • Ladle 1⁄4 cup cheese sauce over onions • Place 2 oz corn and black bean mixture over sauce • Sprinkle 1⁄4 cup shredded cheddar over sauce |
