Nature's Own® Potato Pearls® Premium Mashed Potatoes 1 bag Place Nature's Own® Potato Pearls® Mashed Potatoes in bowl. Add boiling water; stir 10 seconds to distribute. Let stand 5 to 7 minutes; stir smooth. (Potatoes will be stiff.)
Boiling water 2 3/4 qt.
Parmesan cheese, grated 2 2/3 cup Add 12 oz. Parmesan cheese, salt and pepper to potatoes. Stir until thoroughly blended. Cover potato dough; refrigerate until cold.
Kosher salt 4 tsp.
Fresh ground black pepper 2 tsp.
Pepper-jack cheese, cut into 1/2-in. cubes 12 oz. Shape dough into 1-1/2 in. balls, about 1-1/2 oz. each. Push 1 cheese cube into center of each ball.
All-purpose flour 2 cup For coating, place flour in bowl. Add egg wash to separate bowl. Combine breadcrumbs and remaining Parmesan cheese in shallow pan. Coat potato balls in flour, shaking off excess. Roll into egg wash; dredge in crumb mixture to coat evenly. Set aside.
Whole eggs beaten 8  
Water 1/2 cup
Plain dry breadcrumbs 2 cup
Parmesan cheese, grated 1 cup
Deep fry croquettes in 360° F to 370° F oil about 3 minutes or until golden brown. Drain well; serve warm.
