Cheesy Potato Croquette

Place Nature's Own® Potato Pearls® Mashed Potatoes in bowl. Add boiling water; stir 10 seconds to distribute. Let stand 5 to 7 minutes; stir smooth. (Potatoes will be stiff.) |

| Parmesan cheese, grated |

Add 12 oz. Parmesan cheese, salt and pepper to potatoes. Stir until thoroughly blended. Cover potato dough; refrigerate until cold. |

| Pepper-jack cheese, cut into 1/2-in. cubes |

Shape dough into 1-1/2 in. balls, about 1-1/2 oz. each. Push 1 cheese cube into center of each ball. |
| All-purpose flour |

For coating, place flour in bowl. Add egg wash to separate bowl. Combine breadcrumbs and remaining Parmesan cheese in shallow pan. Coat potato balls in flour, shaking off excess. Roll into egg wash; dredge in crumb mixture to coat evenly. Set aside. |
