Mexican Hashbrown Casserole (Hashbrown Tamale Pie)

Ingredient Quantity Instructions
Golden Grill Russet™ Premium Hashbrown Potatoes 1 carton Refresh Golden Grill Russet™ Premium Hashbrown Potatoes according to package directions. Fill carton to fill line with hot water (140º F-160ºF). Close carton; let stand 10 minutes. Set aside.
Quick-Start® Home Style Chili 2 pouch Prepare Quick-Start® Home Style Chili. Brown beef in 8 qt. pot. Add 4 qts. hot water and both pouches of chili. Cook, covered, for 45 minutes, stirring occasionally. Set chili aside.
Hot water 4 qt.
Ground beef 2 lb.
Sharp cheddar cheese, shredded 24 oz. Spray two full hotel pans of 4 in. depth with nonstick spray. Divide and press one-quarter of the refreshed hashbrown potatoes into each pan bottom. Layer each pan with one-quarter the chili and one-quarter the sharp shredded cheese. Repeat the layering in each pan.
Bake at 350ºF conventional oven (or 300ºF convection oven) for 35 to 45 minutes until cheese is golden. Allow to rest 10 minutes out of oven before adding topping.
Topping Spread 1 lb. sour cream over top layer in each pan. Meanwhile, combine lettuce, cilantro, tomatoes and diced avocado in bowl. Divide and spread topping to cover sour cream. Cut each pan 4 x 6.
Sour cream 1 qt.
Iceberg lettuce, shredded 2 head
Cilantro, chopped 2 cup
Tomatoes, diced 2 qt.
Diced avocado 1 lb.
Cheddar-jack cheese, shredded 2 cup Sprinkle each serving with 2 tsp. Cheddar-jack cheese. Garnish with avocado slice.
