Ingredient Quantity Instructions
Santiago® Vegetarian Refried Beans with Whole Beans 1 package 1. Place beans into half-size steamtable pan and prepare according to package directions. Hold warm for service.
Butter, melted 1/4 cup 2. Heat butter in large sauté pan on medium-high heat. Add chicken and seasoning and cook for 5 minutes or until chicken is heated through. Hold warm for service.
Chicken, cooked, medium diced 7 cup
Mexican seasoning blend, commercially prepared 2 tbsp.
Bibb lettuce cups 84   3. For each serving: Arrange 4 lettuce cups on plate and top each with 2 tbsp. beans, 1/2 oz. chicken, 1/2 oz. salsa, 1/4 oz. cheese, and 1 tsp. guacamole.
Salsa fresca, commercially prepared 5 1/4 cup
Colby-Jack, fat-free, shredded 5 1/4 cup
Guacamole, commercially prepared 1 tsp.
Cilantro sprigs 21   4. Garnish each plate with 1 cilantro sprig. Serve.
