Tropical 'Krab' Puffs
Small golden potato-and-cornbread muffins baked with onions, bell peppers, crab meat, and mustard.

| Vegetable oil | 1/4 cup | In large stockpot, heat oil. Add onions and bell peppers; saute 5 minutes. Add water; bring to a boil. Stir in Potato PearlsĀ®, corn bread mix, eggs, surimi, green onions, and mustard. |
| Portion mixture with #30 scoop into well-oiled 1-oz. muffin tins or small cupcake wrappers arranged on sheet pans. Bake 18 to 20 minutes. Cool 2 minutes before removing from tins. | ||
