Country Potato Chowder Crispy pan-fried bacon, red onions, and sweet corn swimming in rich potato chowder. Garnished with fresh green onions and shredded cheddar cheese.

Bacon, diced 6 cup In large stockpot, cook bacon until crisp. Remove bacon with a slotted spoon.
Red onions, diced 2 qt. Add onions and garlic to bacon drippings; saute 5 minutes.
Garlic, finely chopped 1 tbsp.
Chicken stock 2 1/2 gal. Add chicken stock; bring to a boil. Stir in Potato PearlsĀ®, corn, barbecue sauce, pepper sauce, salt, and pepper; bring to a boil.
Potato PearlsĀ® Extra Rich 1/2 carton
Corn kernels, frozen 3 qt.
Barbecue sauce, smokey, commercially prepared 2 cup
Hot red pepper sauce, commercially prepared 2 tbsp.
Salt
Black pepper, ground
Green onions, finely chopped 3 cup Top each serving with 1 tbsp. each green onion and cheese.
Cheddar cheese, shredded 3 cup
