Tortilla Crust Pizza
The crust of this pizza is sprinkled with crushed tortilla chips then topped with refried beans and a variety of vegetables, cheeses, and more tortilla chips for a crunchy and flavorful finish.

Preheat conventional oven to 500 F. |
| Santiago® Refried Beans |

|
Place refried beans in steamtable pan. Stir in boiling water; cover. Hold at least 25 minutes. |
| Tortilla chips, crushed |
1 lb.
|
Reserve 1 cup crushed tortilla chips. Use remaining chips to sprinkle on work surface as you would use flour or cornmeal. |
| Cumin |

Stir next 3 ingredients into beans. |

| Chili powder |

| Pizza dough, commercially prepared |
6 lb.
|
For each pizza, place 12 ounces dough on work surface lightly sprinkled with crushed chips. Roll or pat into 12-inch circle. Place shells on baking sheets sprinkled with crushed chips. Spread about 1-1/2 cups bean mixture on each shell. |
| Zucchini, thinly sliced |
2 lb.

| Red bell pepper, halved, sliced |
12 oz.

| Cheddar cheese, grated |
8 oz.
|
|
| Monterery Jack cheese, grated |
8 oz.

| Roma tomatoes, fresh, thinly sliced |
1 lb.

On each pizza, arrange 3 slices tomato, 12 slices zucchini, and 8 half slices red bell pepper. Arrange 1/2 ounce of each cheese over vegetables. Sprinkle each entire pizza with 2 tablespoons reserved crushed chips. |

Bake for 15 to 20 minutes or until crust is lightly browned and topping is bubbly. Cut with pizza cutter into 6 pieces to serve. Makes 8 12-inch pizzas. |

Note: Bean mixture may be made in advance and held on steamtable. Assemble pizzas just before baking. |
