Poached eggs, refried beans, tomatoes, green chiles, and cheddar cheese nested in deep-fried corn tortilla baskets.

| Santiago® Refried Beans | 5 bag | Prepare refried beans according to package directions. Combine with next 2 ingredients; mix well. |

| Eggs | 350 cup | Poach eggs to medium in boiling water. |

| Cheddar cheese, grated | 11 lb. | Place 2 tortilla baskets on each plate. Fill each with 1 ounce refried bean mixture. Top with 1 poached egg. Sprinkle with 1/2 ounce cheddar cheese and 1/2 ounce chiles. Serve. |
