Sour Cream & Chives Mashed Potatoes
Rich buttermilk mashed potatoes made with traditional baked potato toppers - sour cream and chives.

Combine first 6 ingredients. |

|
| Water, boiling |
1 gal.
|
Quickly whisk potato mixture into boiling water; remove from heat. Continue whisking until potatoes are smooth. |
| Sour cream |

|
Add remaining ingredients; mix until well blended. Keep warm until serving. |
| Chives, fresh, chopped, or 1/2 amount dry chives |

Note: Will hold on steamtable, covered, for 2 to 3 hours. |
