Preheat oven to 375° F (325° F convection). |

Prepare potatoes as package directs; reserve. |

|
Brown ground beef; drain. Add next 5 ingredients; cook until onion is tender. |

Sprinkle mixture with flour; stir in beef stock. Divide mixture between two 2-inch-deep full-size steamtable pans. |

Spread about 5 cups potatoes over each pan of beef mixture. Score with fork. If desired, sprinkle with melted butter. |

Bake for 1 hour (convection oven for 45 minutes) or until golden brown and internal temperature reaches 140° F. If necessary, cover with aluminum foil to prevent overbrowning.
