Instructions

Ingredient Quantity Instructions
Preheat oven to 375° F (325° F convection).
Potato Pearls® Country Style 1 pouch Prepare potatoes as package directs; reserve.
Beef, ground 12 lb. Brown ground beef; drain. Add next 5 ingredients; cook until onion is tender.
Onion, chopped 3 lb.
Parsley 3 cup
Poultry seasoning 1/2 cup
Salt 1 tbsp.
Red pepper, ground 2 tsp.
Carrots, whole, baby, frozen, thawed 4 lb. Stir in next 2 ingredients.
Green beans, frozen then thawed 4 lb.
Flour 1 cup Sprinkle mixture with flour; stir in beef stock. Divide mixture between two 2-inch-deep full-size steamtable pans.
Beef stock 2 cup
Butter or margarine, melted (optional) 1 cup Spread about 5 cups potatoes over each pan of beef mixture. Score with fork. If desired, sprinkle with melted butter.
Bake for 1 hour (convection oven for 45 minutes) or until golden brown and internal temperature reaches 140° F. If necessary, cover with aluminum foil to prevent overbrowning.
