Pork Roast with Country Style Stuffing

Pork Roast with Country Style Stuffing Rich homestyle mix of mashed potatoes, onions, mushrooms, and celery seasoned with sage and served with hearty pork roast smothered in creamy apple gravy.

Instructions

Ingredient Quantity Instructions
Preheat conventional oven to 500° F.
Potato Pearls® Country Style 2 pouch Stir potatoes into boiling water. (Potatoes will be very thick.)
Water, boiling 5 1/2 qt.
Butter 1/2 lb. In skillet, melt butter. Add onions; cook until soft.
Onion, finely chopped 3 lb.
Mushroom, finely chopped 3 lb. Add next 4 ingredients. Cook about 30 minutes, stirring occasionally, until vegetables are soft and liquid has evaporated. Stir into prepared potatoes.
Celery, chopped 2 lb.
Sage, dried 1 1/2 cup
Salt 2 tsp.
Eggs, beaten 6   Stir in eggs.
Pork loins, boneless, 5-lb 3   For each roast, turn fat side down. Spread with 2 cups potato mixture. Roll roast into cylinder. Rub with salt and pepper; cover lean area with 1 strip fat. Tie roast at 1-inch intervals with string. Place in pan, fat side up.

Apple cider 3 qt. Pour 1 quart apple cider over each roast. Cook until browned; reduce oven temperature to 350 F. Continue roasting for total time of 25 minutes per pound or until internal temperature reaches 150° F. Baste several times during cooking.
Remove from oven; let cool 10 minutes before removing strings and carving into slices.
Cream, heavy 3 cup Strain cooking juices into saucepan. Skim off fat. Heat to boiling; cook until thickened. Stir in cream. Cook over low heat until thickened. Season with salt and pepper.

Pepper Heat reserved potato mixture. Serve slices of roast pork with potatoes; serve cream gravy over all.
Note: Internal temperature will continue to rise after roast is removed from oven.
