Vichyssoise
A creamy, flavorful potato and leek soup, this traditional favorite is served cold topped with fresh chives.

| Leeks, white only, thinly sliced | 12 lb. | Melt butter in stockpot. Add leeks; cook, stirring occasionally, until tender, about 10 minutes. |
| Vegetable Broth | 2 gal. | |
| White pepper, ground | 4 tsp. | |
| Nutmeg, ground | 1 tsp. | Stir in vegetable broth; bring liquid to a boil. Reduce heat; stir in white pepper and nutmeg. Simmer until leeks are soft, about 20 minutes. |

| Naturally Potatoes® Deluxe White Mashed | 10 lb. | Prepare mashed potatoes according to package directions. |
| Half & half | 1 gal. | |
| Milk, whole | 2 qt. | |
| Salt | 2 1/2 tbsp. | Blend leek mixture to smooth puree; return to stockput. Stir in mashed potatoes, half and half and milk. Bring soup to simmer; cook 5 minutes, stirring occasionally. Correct seasoning with salt. |
| Fresh chives, chopped | 8 oz. | Cool soup, cover and refrigerate until cold. Stir soup before serving, adding additional broth to thin soup, if necessary. Serve chilled with garnish of chopped chives. *Note if using Naturally Potatoes® Deluxe White Mashed, you may wish to increase the salt. |
