Savory Dill Mashed Potato Bowl

Potato Pearls® mashed infused with savory dill and topped with salmon and green beans.

Ingredients

1  pch Potato Pearls® Smart Servings™ Low Sodium Mashed Potatoes
4  oz Canola oil
2  Tbsp Dill, fresh or dried, finely chopped
1  each Onion, diced
19  each Salmon filets, 3-4 oz, cooked
2 1/2  lb Cut green beans, cooked
20  each Dill sprigs (optional garnish)

Instructions

  1. Prepare Potato Pearls® Smart Servings™ Low Sodium Mashed Potatoes according to package directions.
  2. In a large skillet, heat 1 oz. of canola oil over low heat, add chopped dill and diced onions. Cook until onions are translucent, stirring constantly. Remove from heat and fold onion mixture into prepared Potato Pearls® Mashed Potatoes.
  3. Cook salmon in a 350° F oven until fully cooked to an internal temperature of 145° F, about 8 min. Remove salmon from oven and let it rest for 5 min.
  4. Bowl Assembly: In an individual serving bowl place 1 cup Potato Pearls® Mashed Potatoes and top with green beans and then salmon. Garnish with dill sprig.
