Cheddar Scallion Mashed Potatoes with Whipp® Complete

Mashed potatoes whipped with Cheddar cheese and scallions.

Ingredients

6  cup Whipp® Complete Instant Mashed Potatoes (½ can)
1  gal Water
1/2  gal Milk, 2%
3  Tbsp Salt
1  tsp Black pepper, ground
1  cup Scallions, sliced very thin
3  cup Sharp cheddar cheese, grated

Instructions

  1. Heat water, milk, butter, salt, black pepper and scallions to a boil, over medium high heat, stirring occasionally. Transfer to the bowl of an electric mixer fitted with the whip attachment.
  2. Add Whipp® Complete Instant Mashed Potatoes in a steady stream while whipping at low speed until potatoes begin to thicken, about 1 min. Scrape down the sides of the bowl once during mixing.
  3. Add cheese, one cup at a time, and whip until fully incorporated, about 1 min, scraping down the sides of the bowl once during mixing. Increase speed to high and whip until light, about 3 min, scraping down the sides of the bowl once during mixing. Transfer to steamtable and serve.
