1: Measure 6 1/2 quarts of boiling water into mixing bowl. 2: While using wire whip at low speed, slowly add potatoes. Mix at low speed until uniform, about 30 seconds. 3: At high speed, whip until light and fluffy, 1 to 1 1/2 minutes. Transfer to steamtable pan; cover and hold up to 2 hours on steamtable at 160-170°F.
