Soup Concentrate Preparation Instructions

1:1 Water
Preparation:
• Heat bag in hot water for 2-3 minutes
• Combine 2 quarts of warm water with entire contents of bag; mix well.
• Cook on medium high heat stirring occasionally.
• Bring to a low boil (185°F to 190°F).
• Serve and hold at 155°F to 160°F.
Notes:
• Preparation and heating time is about 45 minutes.
• If soup becomes too thick during long holding times, add water in a small amount at a time. For best presentation and overall quality, product should be changed every 3-4 hours.
3:1 Water
Preparation:

- For an extra rich and creamy soup: substitute milk with half and half or cream
- For a lower fat soup, use 2% milk
• Stir
• Cook on medium high heat stirring frequently to prevent breaking sauce.
• Bring to a low boil (185°F to 190°F).
- Soup must reach a slow simmer at 185°F to 190°F in order for starch to activate and for soup to thicken properly.
- Soup will thicken as it cools.
• Serve and hold at 155°F to 160°F.
